Montanaro Cooked Pesto
The traditional “cunza” or “counza” from Modena and Bologna, from the border lands, is a preparation based on lard and salt flavored with garlic and rosemary. The proposed version is the cooked one, "montanara", which is traditionally used to stuff the classic crescentine and borlenghi.
