Country cracklings
Ciccioli are a specialty of Emilian origin, obtained from a noble and natural processing of pork. They are made up of fatty and lean parts of the pig, cooked for a long time with spices and aromas, to completely degrease the mixture.
They are enjoyed sliced as an appetizer or as an accompaniment to tigelle and crescentine.
