Fresh Tagliatelle - Fresh egg pasta
Tagliatelle are the classic first course of Bolognese cuisine. They owe their name to the fact that the dough, rolled up, is cut into many strips. They can be yellow-fleshed or green-fleshed.
The traditional recipe calls for tagliatelle topped with Bolognese sauce or with a raw ham ragù; but they can also be seasoned with a mushroom or truffle, fish sauce or a game ragù. Excellent, in the classic condiment, the combination with a Barbera dei Colli Bolognesi or a Lambrusco.
