The sludge is the dense layer that remains on the bottom of the terracotta jars in which the olive oil is placed in the winter after the olives are pressed to be stored until the following year. As handed down by the peasant tradition, it is used to spread the cheese wheels in order to create a natural crust that allows a long aging while preserving intact flavors and aromas. The result is a pecorino with a very strong aroma and flavor, savory and slightly spicy, which goes well with structured and aged red wines.
