Pasta Gragnano IGP - Trofie

Artisan pasta that follows the ancient manual processing procedures with the subdivision of roles to ensure a production of superior quality pasta. Only small bronze dies are used. Drying is natural, slow and static in boxes that reproduce the environment of the ancient streets of the city of Gragnano and the rooms of the first pasta factories, at a constant and widespread temperature, respecting the drying times depending on the different thickness of the pasta, from the formed, by varying the humidity of the air and by the rate of acidity.
