The oil is cold extracted from the olives harvested and immediately sent to the mill. It is stored in the dark, in underground tanks kept at a constant temperature to preserve its quality. The oil is bottled at the mill, without any filtration but only after a natural decantation; this procedure gives it a more or less cloudy and veiled appearance, depending on the bottling period and an intense and fruity taste, with a hint of bitterness. If tasted raw, it is slightly spicy due to the high content of Vitamin E. Type: 60% coratina, 40% ogliarola. Mixed harvesting, stranding - shaking - beating.
