Balsamic Vinegar of Modena is obtained from cooked grape must, matured by slow acetification resulting from natural fermentation and progressive concentration through very long aging in a series of barrels of different woods, without the addition of any aromatic substances.
Of a deep and shiny dark brown colour, it shows its density in a correct, smooth syrupiness.
