Aged sheep's cheese - the real Scoparolo cheese
In peasant homes, cellars were often occupied by wine barrels, so the cheeses, which needed to be stored in cool, shady places, were locked away in closets, along with work tools, especially brooms. For this reason, when the farmer asked the boy to fetch him a cheese, he would tell him to get a "scoparolo." It is a sheep's milk cheese, aged by hand, with a mature, ochre-colored rind and a straw-colored, firm, and slightly chalky paste. It has an intense aroma and a bold flavor.
